Smoothies Apple Pie Fruit Crisp Cookies Muffins

2 cups fresh
ripe strawberries 6
tablespoons plain low-fat yogurt 4
tablespoons (1 oz) Thoreau Foods Smoothie
Booster
(Omega 3, Antioxidant, Brain Fuel or
Cholesterol Killer) Wash
and hull strawberries; place uncovered in a single layer on a
sheet of foil in freezer. You can also use frozen fruit from
your favorite source. Once strawberries are solid, place
in food processor. Add Thoreau Foods Smoothie
Booster. Add 4 Tbs yogurt and process
until smooth. Sweeten to taste,
if desired. Strawberries can be replaced with
Blueberries or any other fruit. Experiment and
enjoy!

Pie
Preheat oven to
450
4 cups peeled, cored & sliced apples (8 -10
medium apples)
1/2 - 3/4 cup Thoreau
Foods Cereal - flavor of your choice
1/2 cup
sugar
1 heaping tsp corn starch or
kuzu (optional)
1/8 tsp
salt

We use Palm Oil instead of
shortening for crusts and we love it!
Spectrum Naturals makes a
great Palm Oil substitute.
Combine all dry ingredients,
pour onto apples and stir well
Place bottom crust in 9” or
10" pie pan, add apple mixture
Top with upper crust & seal
(brush w/ egg wash if desired)
Cut vent holes in top
crust
Bake in 450 oven for 10
minutes
Turn
oven down to 350 & bake for 30 – 40 minutes or until golden
and bubbling
No Trans Fat Pie Crust

Naturals has a good Palm Oil product in a white tub.
If
you use a Palm Oil that looks soft or liquid, chill it in the
refrigerator for a while before using it for pie dough.

Preheat oven to

1 1/4 cups Thoreau Foods Cereal
in the flavor of your choice
1 1/2 tablespoons lemon
juice
1/4 cup
flour
1/4 cup Agave Nectar
OR
(1/3 cup brown sugar
)
1/4 cup butter (1/2
stick)
Layer apples in 9” pie pan
or full size loaf pan
Sprinkle lemon juice on
Apples
Work butter into combined dry
ingredients, keeping crumbly
Spread mixture over apples,
packing down slightly
Bake
at 325 for about 40 minutes or until light brown and apples are
soft

Preheat oven
to 350

butter

1/3 cup granulated
sugar)
2 eggs
1 tsp vanilla
extract
1 cup flour
1 tsp baking soda

baking powder
2 1/2 cups Rolled

1/2 cup raisins
(optional)
1/2 cup Chia
Gel (optional)
Beat sugars & butter
together until creamy
Add eggs & vanilla, mix
well
Add combined flour, baking soda
& powder, mix well
Stir in oat/cereal
mixture (& raisins), mix well
Drop tablespoons (or more) onto
cookie sheet
Bake
for 10 - 12 mins or until light brown

Sift
Together 1 3/4 cups
all purpose flour 3/4 tsp
salt 1/4 cup
sugar 2 tsp double acting
baking powder
In a
Separate Bowl Beat 2
eggs
Add to Eggs
2 – 4 Tbs melted
butter
3/4 cups + 3 Tbs
milk
2/3 cup Thoreau Foods Cereal
For
Vanilla Muffins
Use Thoreau Foods Vanilla
cereal
Add 1 tsp vanilla extract to wet
ingredients
Mix wet ingredients
well
For
Cardamom Muffins
Use Thoreau Foods Cardamom
cereal
Add 3/4 tsp ground cardamom to dry ingredients
Mix dry ingredients
well
For all
Muffins Mix the dry
and wet ingredients together lightly
The mixture should be slightly lumpy
Fill greased muffin cups 2/3+ full
Bake at 425 for 20 to 25 minutes
Muffins are done when browned and firm on
top
Chia Seed Fruit Drink
1/4 cup fresh lime or lemon juice (2 limes or 1
lemon, large) 1/4 to 1/2 cup sugar
OR 1/4 to 1/3 cup Agave Nectar 1/4 to 1/3
cup Chia Seeds 10 cups (2 1/2 qts) Water
Add all ingredients to pitcher OR sealable
container Wisk ingredients well in pitcher OR shake
sealed container well Wisk or shake well again after 10 - 15
minutes Chill for 30 minutes or more Will last in refrigerator
about 5 day

1 cup raw unsoaked walnuts 1/2 cup pitted
dates 1/4 cup coconut water 4 tablespoons raw carob 1/2
tablespoon chia seeds
Blend walnuts and dates in a food processer until
smooth Mix carob, coconut water and chia seed Enjoy!
Gluten Free Desserts -Apricot
Truffles
1 cup almonds, soaked 12 - 48 hours and
blanched 1 cup dried apricots 1/2 cup honey dates 1
Tablespoon lemon zest 1 teaspoon vanilla 1/2 tablespoon chia
seeds
Process almonds, apricots, and dates through a
champion juicer using the solid plate or a food processor using the
"s" blade. Add chia seeds, lemon zest and vanilla Form dough
into small balls and chill before serving.
