Chia, first cultivated by
the Aztecs, Mayas, Tehuantapecs, and other Native American peoples
500 years ago has now gone mainstream. In most of these cultures,
Chia was a staple food considered to be sacred, and was consumed
specifically for greater energy by runners, warriors, and
athletes. We were first
introduced to this truly functional food while studying Naturopathic
Medicine in 2000 at Bastyr University and immediately loved it. Being one of our favorite
ingredients, Chia Seed is in all Thoreau Foods products.
A Complete Protein and
Gluten Free
A member of the mint
family, Chia is the seed of the desert plant Salvia Hispanica. It is among the highest in
protein of all the seeds and grains and a good source of calcium,
vitamins and minerals.
The
Good Fat Chia,
a
plant-based source of Omega-3’s, is cholesterol-free. It is
made up of the polyunsaturated essential fatty acids (omega 3’s and
6’s) that your body needs to help emulsify and absorb the fat
soluble vitamins A, D, E, & K.
Mix
with other Foods The
gelatinous characteristic of these seeds is an attribute that makes
other foods more nutritious. The Chia Gel (see recipe below)
combines easily with most foods including smoothies, juices, sauces,
dressings, desserts and yogurts. Due to
their neutral flavor, Chia seeds can be added to just about any food
without changing the taste.

Chia’s high fiber
assists in moderating the rate at which carbohydrates are digested
and assimilated by the body thereby stabilizing blood glucose and
insulin levels in the bloodstream. When you hydrate the highly
soluble seeds in water, it absorbs up to nine times its volume. The gel that forms allows
for a low glycemic index thereby increasing your energy and
endurance while aiding to keep your body hydrated. Since it is not necessary to
grind the chia seeds, they are portable and enable you to add them
to any liquid throughout your day. Cravings for simple carbs are
reduced while energy is maintained during long work days or exercise
periods.

Calci-Yum
Green Smoothie Drink your Greens along
with Chia Seed and Fruit and get your daily calcium needs. Blend
Collard Greens into your smoothie to make them super easy to digest
and you can't taste the greens at all! Chia Seeds are also a great
source of calcium as well as Omega 3, Fiber, Vitamins and Minerals.
The Chia Gel acts as a
terrific thickener in smoothies.
2 tbsp. Thoreau
Foods Chia Seeds (soaked),
1/2 cup banana, 1/2
mango, 1/2 strawberries, 3 leaves collard greens or fresh
kale, agave or other sweetner to
taste
Just blend
with water, ice, or almond milk until very very smooth and drink
up! The smoother it gets, the more pleasant it is to drink and
the easier it is to digest and assimilate!
“Chia
Fresca” - A Refreshing Summer Drink similar to lime or lemonade
10 cups water, 1/3 cup TF Chia Seeds , 1/4
cup fresh lime juice, 1/4 cup Agave Nectar
