Group Classes

Our group classes are part of Adult Education programs in the towns of Acton, Lexington (Minuteman Tech), Lincoln and Sudbury. They may also take place offsite at a retreat setting. Most of our group classes take place in the evenings but if you or your group would like us to be available for a day session, we can accomodate you as well.

Get ready to be in the best nutritional shape of your life by the end of this 4 week series. This series includes lectures, instructional materials, demos and tastings. It is appropriate for those new to the kitchen as well as those looking to learn some new skills and ways to eat healthy while on a budget. Learn techniques for eating healthy while on the road. My goal is to work with you to help you learn about the ingredients in your food and what you should and should not put into your body to be at your best. By incorporating a few changes into your diet, you will boost your immunity, have more energy, and manage your weight better. Week 1 will examine the science behind the food you are eating and the food you could be eating. We will show you how to increase the amount of nutrient dense foods into your daily menu using nuts, dates, sprouts, sea vegetables, nut milks, ingredients high in omega 3 and plant based protein in our recipes. Week 2 will continue with this theme encouraging powerful and sustainable food choices that directly and positively impact your health. We will explore healthy alternatives to sugar, high fructose corn syrup, vinegar, gluten and other processed foods and learn recipes that are more than satisfactory as replacements to these ingredients. The good fats, coconut and avocado for example, will be discussed and incorporated into our recipes. We will review as well as use the kitchen items that are recommended and in some cases essential in a healthy kitchen. Week 3 will focus on sprouting seeds, nuts and grains. Learn how to grow these life giving foods in your own home using various methods including sprouting jars, bags, and trays. We will discuss seed selection, growing equipment (trays, soils, etc), as well as the history and nutritional benefits of this superfood. We will end this class with a super green garden sprouted salad. Week 4 will focus on more advanced recipes using dehydration and juicing equipment. Recipes could include granola, fruit leather, dried fruit snacks, crackers, and kale chips. All recipes prepared and discussed in this class are Gluten Free, Dairy Free, Organic or Wild Harvested, Immune Building and Healing.

Learn how to make terrific salads all winter long using Kale, Collards, Sprouted Seeds and Beans along with more traditional salad greens and other vegetables that can find in your grocery store. Find out about the health benefits and culinary uses of what many consider "weeds" such as dandelions, burdock root, horseradish, chickweed and even seaweed, and how you can use these ingredients to jazz up your dishes both nutritionally and tastefully. Learn how to make your own "raw" salad dressings from avocados, nuts, seeds, sea vegetables, fruits, and vegetables. We will use cold pressed olive oils, apple cider vinegar and kombucha rather than white vinegar. We use lots of garlic, ginger, cilantro, herbs and spices to make the most delicious healing dressings and marinades you have ever tasted. We will mix these with the Green Salads recipes and enjoy in class. Green Salads all Winter is recommended with this class but not required.

Spring and Fall are great times to do a cleanse. Learn how to make your own cleansing drinks using produce and herbs you will find right in your local grocery store that are known to act as liver and kidney detoxifiers. Find out where and how you can buy these ingredients and how easy it is to grow some of these yourself. You will learn about using soups in a cleanse as well as teas and green drinks. We will sample throughout the class. Plan to leave this class with several recipes and ideas to do your own cleanse.

Learn how to combine vegetables, fruits, and superfoods into delicious and satisfying drinks for an optimal start or pick up to your day. In the winter session, we will make hardy drinks using fresh coconut milks and coconut water as well as coconut oils, raw cacao, cacao beans and more. We will combine with beets and greens. In the spring session, we will make a lighter smoothie using more alkalizing greens and sprouts in our recipes. Note that ALL ingredients used are great for you due to their nutritional value. Expect to learn delicious and nutritious ways to fill you and your kids up while gaining energy and stamina all the while. Some examples include a macadamia vanilla coconut shake, a sports recovery drink with lots of vitamins and minerals to replenish you, and a relaxing bedtime drink. Learn how to make Herb Infused Oils. Use the Herb infused Oils to make a salve that you can take home and use for sore muscles or as part of a face cream or body lotion. We'll discuss the medicinal properties of topical herbs such as plaintain, oregano, comfrey, St. John's, wort, cayenne, and calendula. Learn remedies for dry or aging skin, fungus and warts, eczema, dermatitis, and pain. These make great gift items made with all natural ingredients that do not contain parabens or petroleum.

In this class, we start with the infused oils we learned how to make in Part I of this class. We then create our personalized hand and body lotions using selected infused oils as well as essential oils. We use ingredients that can be eaten in our recipes such as grapeseed oil, olive oil, coconut oil and coconut butter, St John's Wort infused oil, and rose water and more. Plan to take home a cream for yourself or as a great gift item for upcoming Valentine's Day. We will only use all natural ingredients that do not contain parabens or petroleum.

Herbs can be used by all of us to increase endurance, decrease inflammation, and support our tissues while enjoying an active lifestyle. This class will provide an overview of specific herbs that will assist our bodies in maintaining the physical activity we love so much. We will cover internal remedies as well as topical applications for dealing with acute injury. We will use herb infused oils to make a poultice and liniment.

Learn the best times for harvesting the leaves, roots and flowers of selected herbal plants. Come hear about the medicinal properties of herbs and the various ways they can be prepared in teas, soups, and other food recipes. We will discuss methods for making an infused and decocted tea and a fresh and a dried herbal tincture. Plan to leave this class with recipes, samples and new insights on harvesting, drying, storing and using herbs.

Individual classes are hands on and take place in the convenience of your own home. We are located in Boxborough, MA and will drive up to 20 miles to your location. For those of you over our 20 mile radius, an additional fuel charge will be agreed upon. Raw in Training - Recipe Development 6 sessions $372
Series includes Breakfast, Lunch, Dinner, Appetizers, Soups, and Desserts.
